For its production we use wildflower honey from Lunigiana and spring water from the Apuan Alps; the honey is dissolved in water in due proportions and the “mosto” obtained, placed to ferment in steel drums for the time necessary to reach the desired alcohol content. Our mead is characterized by extraordinary delicacy and refined sweetness; it accompanies cheeses, dried fruits, desserts and dark cioccolato and is excellent for meditation.

L’idromele (idro’mele / dal greco, hydor “water” e méli “honey”) is the world’s oldest fermented product and can be considered a “honey wine.” Its essence comes from mixing water and honey to achieve alcoholic fermentation. In ancient times it was a symbol of immortality; in the Middle Ages it was customary to give newly married couples enough mead for one moon (one month), this would promote fertility and procreation, especially for the birth of a male heir.
